
Ingredients:
• 1 lb. Ground Beef
• 2 cups White Rice
• 1 cup Onion, chopped
• 1 can Whole Corn Kernels, drained
• 1 can Black Beans, drained
• 2 Glove Garlic, minced
• 1 Red Bell Peppers, chopped
• 5 tbsp. Tomato Paste
• 1 packet Taco Seasoning Mix
• 1 tsp. Chili Powder
• Salt and Black Pepper to taste
• 2 cups Chicken Broth
• 2 cups Shredded Cheddar Cheese
Ingredients:
- In a skillet with oil over med high heat add in the onion, garlic and bell pepper, cook until tender.
- Add in the ground beef, cook until brown and drain off grease.
- Add in the black beans and corn and tomato paste, taco seasoning mix and chili powder, salt and black pepper, stir well until combined.
- Add in the chicken broth and rice bring to a boil and cover the skillet with lid and let simmer until rice is done.
- Sprinkle in the cheese and stir well until cheese is melted.
- Serve warm.
