Mexican Ground Beef Casserole

Mexican Ground Beef Casserole is made with ground beef, black beans tomatoes, corn, rice and bell peppers, cheese.

Ingredients:

• 1 lb. Ground Beef

• 2 cups White Rice

• 1 cup Onion, chopped

• 1 can Whole Corn Kernels, drained

• 1 can Black Beans, drained

• 2 Glove Garlic, minced

• 1 Red Bell Peppers, chopped

• 5 tbsp. Tomato Paste

• 1 packet Taco Seasoning Mix

• 1 tsp. Chili Powder

• Salt and Black Pepper to taste

• 2 cups Chicken Broth

• 2 cups Shredded Cheddar Cheese

Ingredients:

  1. In a skillet with oil over med high heat add in the onion, garlic and bell pepper, cook until tender.
  2. Add in the ground beef, cook until brown and drain off grease.
  3. Add in the black beans and corn and tomato paste, taco seasoning mix and chili powder, salt and black pepper, stir well until combined.
  4. Add in the chicken broth and rice bring to a boil and cover the skillet with lid and let simmer until rice is done.
  5. Sprinkle in the cheese and stir well until cheese is melted.
  6. Serve warm.
