Orzo Pasta Salad

This Orza Pasta Salad is filled with olives, cucumber chickpeas, feta cheese with orza pasta and Italian dressing.

Instructions:

• 2 cups Cooked Orza Pasta

• 1 cup Cherry Tomatoes, cut into halves

• 1 cup Cucumber, sliced

• 1 cup Cooked Chickpeas, rinsed and drained

• 1 cup Olives

• 1/2 cup Sliced Red Onions

• 1 block Feta Cheese, cut into cubes

• 1 tbsp. Fresh Lemon Juice from one lemon

• Italian Dressing

• 1 tbsp. Fresh Lemon Juice from one lemon

• 1 cup Fresh Basil

• Salt and Black Pepper to taste

Instructions:

  1. In a pot of boiling salty water cook the pasta according to box instructions and drained.
  2. In a bowl add in the orzo and cucumbers, tomatoes, cheese and red onion, olives, chickpeas.
  3. Drizzle in the fresh lemon juice and dressing,
  4. Season with Salt and Black Pepper and stir well until combined. Garnish with fresh basil and serve.
