Italian Chicken and Rice Casserole

This Italian Chicken and Rice Casserole is so easy to make with few ingredients.

Ingredients:

• 1 lb. Chicken Thighs

• 1 cup White Rice

• 1 can Diced Tomatoes

• 2 tsp. Dried Italian Seasoning Mix

• 1 Onion, diced

• 1 cup Chicken Broth

• Salt and Black Pepper to taste

Instructions;

  1. Preheat oven to 350 degrees and grease a baking dish with cooking.
  2. In a skillet with oil over med high heat cook the chicken thighs until done and golden brown, drained off grease. Place the chicken on a plate and set aside.
  3. In the same skillet over med high heat cook onions until tender and season with salt, black pepper, stir to combine.
  4. Add in the rice, diced tomatoes and chicken broth, stir well until mixed and bring to a boil. m
  5. Pour the rice mixture into greased baking dish and lay chicken on top of the rice.
  6. Bake for 35 minutes until rice is tender and bubbly hot. Serve.
