
Ingredients:
• 1 lb. Chicken Thighs
• 1 cup White Rice
• 1 can Diced Tomatoes
• 2 tsp. Dried Italian Seasoning Mix
• 1 Onion, diced
• 1 cup Chicken Broth
• Salt and Black Pepper to taste
Instructions;
- Preheat oven to 350 degrees and grease a baking dish with cooking.
- In a skillet with oil over med high heat cook the chicken thighs until done and golden brown, drained off grease. Place the chicken on a plate and set aside.
- In the same skillet over med high heat cook onions until tender and season with salt, black pepper, stir to combine.
- Add in the rice, diced tomatoes and chicken broth, stir well until mixed and bring to a boil. m
- Pour the rice mixture into greased baking dish and lay chicken on top of the rice.
- Bake for 35 minutes until rice is tender and bubbly hot. Serve.
