
Ingredients:
Filling
• 1 pint Fresh Apricots, peeled and pitted, slice
• 2 tbsp. Light Brown Sugar
• 1/2 cup Fresh Lemon Juice from one lemon
• 1 tbsp. Cornstarch
• 1/2 tsp. Ground Cinnamon
• 1/2 tsp. Ground Ginger
Oat Crumble Topping
• 1 cup Rolled Oats
• 1/3 cup Light Brown Sugar
• 1 tsp. Ground Cinnamon
• 1 tsp. Ground Ginger
• 1/2 cup Unsalted Butter, softerned, cut into cubes
Instructions:
Filling
- Preheat oven to 350 degrees and grease a baking dish with cooking spray.
- In a bowl add apricot slices and brown sugar, lemon juice and cinnamon, ginger, stir well until combined.
- Pour the filling into the greased baking dish.
Oat Crumble Topping
- In a bowl add in the oats and brown sugar, cinnamon, ginger, stir well until combined.
- Add in the butter cubes into the oat mixture and stir well.
- Spread the topping over the apricot filling out evenly.
- Bake for 35 minutes until topping is golden brown and the filling is bubbly hot. Serve warm.
