Apricot Crumble

Apricot Crumble is filled with fresh apricot top oat crumble topping.

Ingredients:

Filling

• 1 pint Fresh Apricots, peeled and pitted, slice

• 2 tbsp. Light Brown Sugar

• 1/2 cup Fresh Lemon Juice from one lemon

• 1 tbsp. Cornstarch

• 1/2 tsp. Ground Cinnamon

• 1/2 tsp. Ground Ginger

Oat Crumble Topping

• 1 cup Rolled Oats

• 1/3 cup Light Brown Sugar

• 1 tsp. Ground Cinnamon

• 1 tsp. Ground Ginger

• 1/2 cup Unsalted Butter, softerned, cut into cubes

Instructions:

Filling

  1. Preheat oven to 350 degrees and grease a baking dish with cooking spray.
  2. In a bowl add apricot slices and brown sugar, lemon juice and cinnamon, ginger, stir well until combined.
  3. Pour the filling into the greased baking dish.

Oat Crumble Topping

  1. In a bowl add in the oats and brown sugar, cinnamon, ginger, stir well until combined.
  2. Add in the butter cubes into the oat mixture and stir well.
  3. Spread the topping over the apricot filling out evenly.
  4. Bake for 35 minutes until topping is golden brown and the filling is bubbly hot. Serve warm.
