Apricot Bundt Cake

Apricot Bundt Cake is moist and filled with fresh apricot and dusting with powdered sugar on top.

Ingredients:

• 2 cups Self-Rising Flour

• 1 cup Granulated Sugar

• 2 cups Sliced Apricot, remove pit

• 1/2 cup Greek Plain Yogurt

• 1 tsp. Vanilla Extract

• 1/2 cup Unsalted Butter, softened

• 2 Eggs

• Powdered Sugar for dusting

Instructions:

  1. Preheat oven to 350 degrees and grease a bundt cake pan with cooking spray.
  2. In a bowl of stand up mixer add in the flour, sugar, vanilla extract and sour cream, butter, eggs, beat well until combined.
  3. Stir in the apricot until combined.
  4. Pour the cake batter into greased bundt cake pan and bake for 35 minutes until light golden brown. Let cake cool for 10 minutes before dusting with powdered sugar and serve.
