
Ingredients:
• 1 box Spaghetti Pasta
• 1 lb. Fresh Shrimp, peeled, deviened
•4 cups Fresh Baby Spinach
• 1/2 Onion, diced
• 2 Tomatoes, diced
• 1 tbsp. Minced Garlic
• 1/2 Bell Pepper, chopped
• 2 tsp. Thyme
• 1/2 tsp. Cayenne Pepper
• 1 tsp. Smoked Paprika
• 1 tsp. Creole Seasoning
• 1/2 cup Chicken Broth
• 1 tbsp. Fresh Lemon Juice from one lemon
• 2 tbsp. Olive Oil
• 2 tbsp. Unsalted Butter, softerned
• Salt and Black Pepper to taste
Instructions:
- In a pot of salty boiling water over med high heat cook the pasta according to package instructions. Drain and set aside.
- Season the shrimp with creole seasoning.
- In a skillet over med high heat add in oil, add in the shrimp and saute about 5 minutes until red showing in the middle.
- Place the shrimp in a plate and set aside.
- In the same skillet over med high heat add in the butter, onions and garlic, tomatoes, thyme and bell pepper, smoked paprika and cayenne pepper, let simmer for 3 minutes while stirring occasionally.
- Pour in the chicken broth and lemon juice, stir well until combined and cook for 1 minute. Season with salt and black pepper.
- Pour in the cooked spaghetti, shrimp and spinach, stir well until combined.
- Take the skillet out heat and serve warm.
