Chicken Quesadilla

Chicken Quesadilla is loaded with chicken, red bell peppers, lettuce, tomatoes and black beans, cheese wrap in a tortilla.

Ingredients:

• 1 package Soft Tortillas

• 2 Boneless, Skinless Chicken Breast, diced

• 1 can Black Beans, drained, rinsed

• 2 cups Shredded Lettuce

• 2 cups Tomato, chopped

• 2 cups Onion, chopped

• 2 cups Red Bell Peppers, chopped

• 1 tsp. Chili Powder

• 1 tsp. Garlic Powder

• 1/2 tsp. Onion Powder

• 1/2 tsp. Dried Oregano

• 1/2 tsp. Salt

• 1 package Shredded Cheddar Cheese

Instructions:

  1. In a skillet with oil over med high heat add in the chicken and add in the chili powder, onion powder and salt, oregano, stir well and cook until chicken cook through about 8 minutes. Place the chicken on paper lined plate and set aside.
  2. In the same skillet over med high spray cooking spray and add Belk peppers, black beans and onions, cook until tender. Add the chicken back to skillet, stir well until combined and cook for 15 minutes.
  3. Take the chicken mixture in a plate.
  4. Lay the tortilla on flat surface and spoon the chicken mixture and sprinkle with cheese into the tortilla and wrap to fold tightly.
  5. In another skillet with oil over med high, place the tortilla wraps and cook until the golden brown on each side and cheese is melted.
  6. Serve warm.
