Sweet Potato Burger

This Sweet Potato Burger is meatless, healthy with black bean on hamburger buns.

Ingredients:

• 1/2 cup Mashed Sweet Potato

• 1 can Black Beans, drained, rinsed

• 1/2 cup Whole Corn Kernels

• 1 Green Bell Peppers, diced

• 1 Red Bell Peppers, diced

• 1/2 cup Rolled Oats

• 1/2 tsp. Garlic Powder

• 1/2 tsp. Onion Powder

• 1/2 tsp. Paprika

• 1 tsp. Italian Seasoning

• 1 tsp. Ground Cumin

• 1 tsp. Ground Coriander

• 1/4 tsp. Salt

• 1/2 tsp. Black Pepper

• Olive Oil

• Hamburger Buns

Instructions:

  1. In a skillet over med high heat drizzle in olive oil and add in Belk peppers, saute until tender and soft. Turn off the heat.
  2. Add in the corn, stir well mixed and let cool.
  3. In a food processor add in the mashed sweet potatoes and half of the black beans and processor about 10 seconds until combined.
  4. Add in the oats and all of the spices, processor until combined.
  5. Pour in a bowl and in the bell peppers, mix well.
  6. Preheat oven to 400 degrees and greased two baking sheet with cooking spray.
  7. With clean hands form mixture into patties and place on 2 greased baking sheets.
  8. Bake for 35 minutes until done and let cool for 10 minutes before serving.
