Pumpkin Chocolate Chip Muffins

Pumpkin Chocolate Chips Muffis is loaded with pumpkin puree, chocolate chips, slices top with cream cheese icing.

Ingredients:

Muffins

• 2 cups Self-Rising Flour

• 1 cup Granulated Sugar

• 1/2 tsp. Ground Cloves

• 1/2 tsp. Ground Cinnamon

• 1/2 tsp. Allspice

• 1/2 tsp. Pumpkin Pie Spice

• 1 cup Pumpkin Puree

• 1 package Mini Chocolate Chips

• 1/2 cup Water

• 1/2 cup Vegetable Oil

• 2 Eggs

Cream Cheese Frosting

• 1 package Cream Cheese

• 4 cups Powdered Sugar

• 2 tsp. Vanilla Extract

• 2 tbsp. Milk

• 1/2 cup Butter, softened

Instructions:

Muffins

  1. Preheat oven to 350 degrees and line a muffin pan tins with muffin liners.
  2. In a bowl of stand up mixer add in the flour, sugar, cloves and cinnamon, allspice, pumpkin pie spice, beat well until combined.
  3. Add in pumpkin puree, oil and milk, eggs, beat well until combined. Stir in the chocolate chips well mixed.
  4. Pour the batter into muffin tins liners and bake for 35 minutes until light golden brown and let muffins cool for 10 minutes before icing.

Cream Cheese Icing

  1. In a bowl of stand up mixer add in the cream cheese, butter and powdered sugar, milk, beat well until combined and smooth, fluffy.
  2. Frost each muffin with icing and serve.
