
Ingredients:
Muffins
• 2 cups Self-Rising Flour
• 1 cup Granulated Sugar
• 1/2 tsp. Ground Cloves
• 1/2 tsp. Ground Cinnamon
• 1/2 tsp. Allspice
• 1/2 tsp. Pumpkin Pie Spice
• 1 cup Pumpkin Puree
• 1 package Mini Chocolate Chips
• 1/2 cup Water
• 1/2 cup Vegetable Oil
• 2 Eggs
Cream Cheese Frosting
• 1 package Cream Cheese
• 4 cups Powdered Sugar
• 2 tsp. Vanilla Extract
• 2 tbsp. Milk
• 1/2 cup Butter, softened
Instructions:
Muffins
- Preheat oven to 350 degrees and line a muffin pan tins with muffin liners.
- In a bowl of stand up mixer add in the flour, sugar, cloves and cinnamon, allspice, pumpkin pie spice, beat well until combined.
- Add in pumpkin puree, oil and milk, eggs, beat well until combined. Stir in the chocolate chips well mixed.
- Pour the batter into muffin tins liners and bake for 35 minutes until light golden brown and let muffins cool for 10 minutes before icing.
Cream Cheese Icing
- In a bowl of stand up mixer add in the cream cheese, butter and powdered sugar, milk, beat well until combined and smooth, fluffy.
- Frost each muffin with icing and serve.
