Blueberry Tiramisu

Blueberry Tiramisu is layer with ladyfingers and cream cheese with a blueberry sauce over top.

Ingredients:

• 1 cup Fresh Blueberries

• 1/2 cup Blueberry Preserve

• 1 container Cream Cheese, softened

• 1 cup Heavy Cream

• 1 tbsp. Granulated Sugar

• 1/2 cup Powdered Sugar

• 1 tsp. Vanilla Extract

• 1 cup Brew Coffee

• 1 package Ladyfingers

• Whipped Cream for garnish

Instructions:

  1. In a bowl of stand up mixer add in the heavy cream and whip until stiff peaks.
  2. In a bowl add in the cream cheese,  powdered sugar and vanilla extract, whisk until smooth.
  3. Stir cream cheese mixture into heavy cream until combined.
  4. In a bowl add in the blueberries and sugar, mix well to coated and mashed blueberries with a fork.
  5. In a another bowl add coffee and blueberry preserves, stir well until combined.
  6. Dip each ladyfingers into coffee and blueberry preserves mixture to coated on both sides.
  7. Layer ladyfingers evenly in the bottom of baking dish.
  8. Spread evenly heavy cream mixture over ladyfingers and then layer more ladyfingers and then add mashed blueberries.
  9. Spread remaining heavy cream mixture over top.
  10. Spread the whipped cream evenly over top and garnish with blueberries.
  11. Place in the fridge to chill until ready to serve about 4 hours.
