Creamy Carrot Soup

Creamy Carrot Soup is made with carrots, fresh ginger and apple cider vinegar.

Ingredients:

• 1 package Carrots, roughly chopped

• 1 tsp. Grated Fresh Ginger

• 1/2 Onion, chopped

• 2 Mashed Garlic Cloves

• 1 tbsp. Apple Cider Vinegar

• 1 tsp. Olive Oil

• 3 cups Vegetable Broth

• Salt and Black Pepper to taste

Instructions:

  1. In a large pot over med high heat add in the olive oil with onions and salt, black pepper cook until onions are tender.
  2. Add in the carrots, garlic and ginger, apple cider vinegar and vegetable broth, stir and let come to a boil for 25 minutes.
  3. Take pot off the heat and let cool for 20 minutes.
  4. Pour in a food processor add processor until smooth like soup.
  5. Serve in bowls while it’s still warm.
