
Ingredients:
• 1 package Carrots, roughly chopped
• 1 tsp. Grated Fresh Ginger
• 1/2 Onion, chopped
• 2 Mashed Garlic Cloves
• 1 tbsp. Apple Cider Vinegar
• 1 tsp. Olive Oil
• 3 cups Vegetable Broth
• Salt and Black Pepper to taste
Instructions:
- In a large pot over med high heat add in the olive oil with onions and salt, black pepper cook until onions are tender.
- Add in the carrots, garlic and ginger, apple cider vinegar and vegetable broth, stir and let come to a boil for 25 minutes.
- Take pot off the heat and let cool for 20 minutes.
- Pour in a food processor add processor until smooth like soup.
- Serve in bowls while it’s still warm.
