Pumpkin Chili

Pumpkin Chili is made with ground turkey and vegetables, pumpkin puree is perfect Fall season comfort food.

Ingredients:

• 1 lb. Ground Turkey

• 1 can Red Kidney Beans, rinsed and drained

• 1 can Black Beans, rinsed and drained

• 1 can Pinto Beans, rinsed and drained

• 1 can Whole Corn Kernels, drained

• 1 can Diced Carrots, drained

• 1 can Fire-Roasted Tomatoes with juice

• 1 can Crushed Tomatoes

• 1 can Pumpkin Puree

• 1 cup Diced Onions

• 1 cup Diced Red Bell Peppers

• 1 tsp. Pumpkin Pie Spice

• 2 tbsp. Mined Garlic

• 2 tbsp. Mined Jalapeno

• 2 tbsp. Tomato Paste

• 2 tbsp. Worcestershire Sauce

• 2 tbsp. Olive Oil

• 2 cups Chicken Broth

• 1 packet Chili Seasoning Mix

• Salt and Black Pepper to taste

Instructions:

  1. In a large pot over med high heat with olive oil add in the onions, cook for 2 minutes.
  2. Add in the minced garlic, cook for 25 seconds.
  3. Add in the ground turkey, cook for 6 minutes until no longer pink.
  4. Add in the chili seasoning mix and pumpkin pie spice, stir, cook for 1 minute.
  5. Add in the black beans and kidney beans, pinto beans, corn and carrots, pumpkin puree, crushed tomatoes, diced tomatoes, tomato paste, chicken broth and Worcestershire sauce salt and black pepper, stir well until combined.
  6. Let it cook for 35 minutes until bubbly hot and stir occasionally until done.
  7. Serve warm in serving bowls.
