
Ingredients:
• 6 Hard Boiled Eggs
• 1 Ripe Avocado pitted and mashed
• 1 tbsp. Sour Cream
• 1 tbsp. Fresh Lime Juice from one lime
• 1/2 tbsp. Fresh Lime Zest from one lime
• 1 tbsp. Chopped Cilantro
• 2 tbsp. Chopped Red Onion
• Salt and Black Pepper to taste
• Cayenne to taste
• 2 Cooked Bacon, crumbled to garnish
Instructions:
- In a pot of boiling water boil the eggs until done. Peel the eggs and cut in half. Spoon out the egg yolk to a bowl.
- In a bowl of egg, add in mashed avocado, sour cream, lime juice and lime zest, cilantro, red onion and salt, black pepper, cayenne pepper, stir well until combined well mixed.
- Now spoon the filling into white egg shells and garnish with crumble bacon.
