
Ingredients:
Chocolate Cupcakes
• 2 cups Self-Rising Flour
• 1 cup Granulated Sugar
• 1 cup Cocoa Powder
• 1 cup Semisweet Chocolate Chips
• 1 tsp. Vanilla Extract
• 1 cup Vegetable Oil
• 1 cup Buttermilk
• 1/2 cup Unsalted Butter, softened
• 2 Eggs
Buttercream Frosting
• 4 cups Powdered Sugar
• 1 container of Cream Cheese
• 1 cup Unsalted Butter, softened
• 1 tsp. Vanilla Extract
• Chocolate Chips for garnish with eyes
Instructions:
Chocolate Cupcakes
- Preheat oven to 350 degrees and grease a muffin pan tins with cupcake liners.
- In a bowl of stand up mixer add in the flour, sugar, cocoa powder and chocolate chips, vanilla extract, oil, buttermilk, butter and eggs, beat well until combined.
- Pour the batter into the muffin pan tins liners and bake for 35 minutes until light golden brown. Let cupcakes cool completely before frosting.
Buttercream Frosting
- In a bowl of stand up mixer add in butter and cream cheese, beat well until creamy.
- Add in the vanilla extract and sugar, beat well until smooth and fluffy.
Assemble
- Use a piping bag to pipe on the frosting top of each cupcakes and then use chocolate chip to make each frosting with eyes.
