Apricot Pie

This apricot Pie is filled with fresh apricots on a pie crust.

Ingredients:

• 2 Store Brought Pie Crust

• 1/3 cup Self Rising Flour

• 2/4 cup Granulated Sugar

• 1 tsp. Ground Cinnamon

• 1/3 tsp. Ground Ginger

• 1 tbsp. Fresh Lemon Juice from one lemon

• 4 cups Fresh Apricots, pitted and sliced

Instructions:

  1. Preheat oven to 350 degrees and grease a pie pan with cooking spray. Place one pie crust inside the pie pan.
  2. In a bowl of stand up mixer add in the flour, sugar, cinnamon and ginger, mix well.
  3. Add in apricots and lemon juice, stir well until combined.
  4. Pour the filling into the pie crust.
  5. Now take the second pie crust and use a pizza cutter to cut out stripes. Place the pie crust stripes on top of the pie filling.
  6. Bake for 45 minutes until light golden brown and let pie cool for 10 minutes before slicing and serving.
