
Ingredients:
• 2 Store Brought Pie Crust
• 1/3 cup Self Rising Flour
• 2/4 cup Granulated Sugar
• 1 tsp. Ground Cinnamon
• 1/3 tsp. Ground Ginger
• 1 tbsp. Fresh Lemon Juice from one lemon
• 4 cups Fresh Apricots, pitted and sliced
Instructions:
- Preheat oven to 350 degrees and grease a pie pan with cooking spray. Place one pie crust inside the pie pan.
- In a bowl of stand up mixer add in the flour, sugar, cinnamon and ginger, mix well.
- Add in apricots and lemon juice, stir well until combined.
- Pour the filling into the pie crust.
- Now take the second pie crust and use a pizza cutter to cut out stripes. Place the pie crust stripes on top of the pie filling.
- Bake for 45 minutes until light golden brown and let pie cool for 10 minutes before slicing and serving.
