Pink Lemonade Cupcakes

Pink Lemonade Cupcakes are moist and easy to make with few ingredients top with vanilla frosting and sprinkles.

Instructions:

• 2 cups Self-Rising Flour

• 1 cup Granulated Sugar

• 1 tbsp. Lemon Zest from two lemons

• 1/2 cup Fresh Lemon Juice from 3 lemons

• 2 tsp. Vanilla Extract

• Few drops of Red Food Coloring

• 2/4 cup Unsalted Butter, softened

• 2/4 cup Milk

• 2 Eggs

• 1 container Vanilla Frosting

• Sprinkles

Instructions:

  1. Preheat oven to 350 degrees and in a muffin pan tins with cupcake liners.
  2. In a bowl of stand up mixer add in the flour, sugar, lemon zest, lemon juice, vanilla extract, red food coloring, beat well until combined.
  3. Add in the butter, milk and eggs, beat well until combined.
  4. Pour batter into muffin tins liners and bake for 35 minutes until light golden. Let cupcakes cool completely before frosting.
  5. Frost each cupcake and sprinkles on top.
