
Ingredients:
Chocolate Cupcakes
• 2 cups Self-Rising Flour
• 1 cup Granulated Sugar
• 1/4 cup Cocoa Powder
• 1 bar of Dark Chocolate, chopped
• 1 tsp. Vanilla Extract
• 1 stick Unsalted Butter, softened
• 2 Eggs
Peanut Butter Frosting
• 1 cup Creamy Peanut Butter
• 2 cups Powdered Sugar
• 1/2 tsp. Vanilla Extract
• 2 sticks Unsalted Butter, softened
• Pinch of Salt
• 2 cups Chopped Peanut Butter Cups more for garnish
Instructions:
Chocolate Cupcakes
- Preheat oven to 350 degrees and line a muffin pan tins with cupcake liners.
- In a bowl of stand up mixer add in the flour, sugar, cocoa powder and chopped chocolate, beat well until combined.
- Add in the vanilla extract, butter and milk, eggs, beat well for combined.
- Pour the batter into muffin tins liners and bake for 35 minutes. Let cupcakes cool completely before frosting.
- Make the frosting, add in the ingredients into a bowl of stand up mixer and beat well until smooth and fluffy.
- Spoon in the frosting into a piping bag and pipe on the frosting to each cupcake and garnish with peanut butter cups.
