Halloween Mummy Cupcakes

These Halloween Mummy Cupcakes are easy to make with chocolate cupcakes and a royal icing topping, candy eyes.

Ingredients:

• 2 cups Self-Rising Flour

• 1 cup Granulated Sugar

• 1 cup Cocoa Powder

• 1 cup Chopped Chocolate

• 1/4 cup Cold Coffee

• 1/4 cup Buttermilk

• 2 Eggs

• 1 store brought Buttercream Frosting

• 1 package Edible Candy Eyes

Instructions:

  1. Preheat oven to 350 degrees and line a muffin pan tins with cupcake liners.
  2. In a bowl of stand up mixer add in the flour, sugar, cocoa powder and chocolate, coffee, buttermilk and eggs, beat well until combined.
  3. Pour the batter into muffin tins liners and bake for 35 minutes until light golden brown.
  4. Let cupcakes cool completely before frosting.
  5. Spoon the frosting in a piping bag, pipe on the top of cupcakes to look like a mummy and place candy eyes in the middle.
