Vegetarian Stuffed Peppers

Vegetarian Stuffed Peppers is meatless with brown rice, black beans and corn top shredded cheddar cheese.

Ingredients:

• 5 Bell Peppers, cut the top off and remove seeds, membranes

• 1 2/4 cup Cooked Brown Rice

• 1 2/4 cup Cooked Black Beans, drained and rinsed

• 1 cup Whole Corn Kernels

• 1 Onion, chopped

• 1 Jalapeno Pepper, remove stem and chopped

• 5 Garlic Cloves, chopped

• 4 tbsp. Tomato Paste

• 2 tbsp. Chili Powder

• 1 tsp. Cumin

• Salt and Black Pepper to taste

• 2 tbsp. Fresh Lime Juice from one lime

• 1 tsp. Fresh Lime Zest from one lime

• 2 cups Shredded Cheddar Cheese

Instructions:

  1. Preheat oven to 350 degrees and grease a baking dish with cooking spray.
  2. Place the bell peppers in the greased baking dish and bake for 10 minutes. Take out of the oven and set aside.
  3. In a skillet over med high with oil add in garlic and jalapenos, cook for 5 minutes.
  4. Add in the skillet tomato paste, chili powder, salt, black pepper, stir, cook for 3 minutes until thickened.
  5. Take skillet off the heat and add in brown rice, black beans and corn, lime juice, lime zest, stir well until combined.
  6. Now fill each bell peppers with the filling top with cheese and bake for 10 minutes until cheese is melted.
  7. Serve warm.
