
Ingredients:
• 5 Bell Peppers, cut the top off and remove seeds, membranes
• 1 2/4 cup Cooked Brown Rice
• 1 2/4 cup Cooked Black Beans, drained and rinsed
• 1 cup Whole Corn Kernels
• 1 Onion, chopped
• 1 Jalapeno Pepper, remove stem and chopped
• 5 Garlic Cloves, chopped
• 4 tbsp. Tomato Paste
• 2 tbsp. Chili Powder
• 1 tsp. Cumin
• Salt and Black Pepper to taste
• 2 tbsp. Fresh Lime Juice from one lime
• 1 tsp. Fresh Lime Zest from one lime
• 2 cups Shredded Cheddar Cheese
Instructions:
- Preheat oven to 350 degrees and grease a baking dish with cooking spray.
- Place the bell peppers in the greased baking dish and bake for 10 minutes. Take out of the oven and set aside.
- In a skillet over med high with oil add in garlic and jalapenos, cook for 5 minutes.
- Add in the skillet tomato paste, chili powder, salt, black pepper, stir, cook for 3 minutes until thickened.
- Take skillet off the heat and add in brown rice, black beans and corn, lime juice, lime zest, stir well until combined.
- Now fill each bell peppers with the filling top with cheese and bake for 10 minutes until cheese is melted.
- Serve warm.
