Pumpkin Chocolate Chip Cookies

Pumpkin Chocolate Chip Cookies are soft inside and crispy on the side filled pumpkin puree and chocolate chips.

Ingredients:

• 2 cups Self-Rising Flour

• 1 cup Granulated Sugar

• 1/2 cup Light Brown Sugar

• 1 tsp. Ground Cinnamon

• 1 tsp. Ground Ginger

• 1 tsp. Nutmeg

• 1 tsp. Vanilla Extract

• 1/2 cup Vegetable Oil

• 1 cup Pumpkin Puree

• 1 2/4 cup Semisweet Chocolate Chips

• 1 Egg

Instructions:

  1. Preheat oven to 350 degrees and grease a cookie sheet with cooking spray.
  2. In a bowl of stand up mixer add in flour, white sugar, brown sugar and cinnamon, ginger and nutmeg, cloves, beat well until combined.
  3. Add in the vanilla extract, oil and pumpkin puree, egg, beat well until combined. Stir in the chocolate chips well mixed.
  4. Use a cookie scoop to scoop the cookie dough onto a greased cookie sheet.
  5. Bake for 12 minutes until light golden brown. Let cookies cool for 10 minutes before serving.
