Lobster Risotto

Lobster Risotto is made with lobster meat in a tomatoes sauce over rice.

Ingredients:

• 1 cup Cooked Lobster Meat, chopped

• 1 3/4 cup White Rice

• 4 cups Vegetable Broth

• 3 Cloves of Garlic, minced

• 1 cup Tomatos, chopped

• 2 tbsp. Tomato Paste

• 2/4 cup Grated Parmesan Cheese

• Salt and Black Pepper to taste

Instructions:

  1. In a large pot over med high heat oil and add in garlic, cook until tender, add in the rice and salt, black pepper, stir let it simmer about 4 minutes. Until rice is done.
  2. Add in tomatos, tomato paste and stir, cook about 5 minutes
  3. Add in vegetable broth, stir well until combined and add in the lobster meat, cheese cook for 15 minutes until creamy.
  4. Serve warm.
