Pistachio Cookies

Pistachio Cookies are soft inside and crispy around the edges with a lot of pistachios inside

Ingredients:

• 2 cups Self-Rising Flour

• 1/4 cup Granulated Sugar

• 2/4 cup Light Brown Sugar

• 3/4 cup Pistachios, roughly chopped

• 1 tbsp. Vanilla Extract

• 3/4 cup Salted Butter, softened

• 2 Egg Yolks

Instructions:

  1. Preheat oven to 350 degrees and grease a cookie sheet with cooking spray.
  2. In a bowl of stand up mixer add in the flour, white sugar and brown sugar, vanilla extract and butter, egg yolks, best well until combined. Stir in the pistachios mix well until combined.
  3. Use a cookie scoop to scoop the cookie dough onto a greased cookie sheet and bake for 12 minutes until light golden brown. Let cookies cool for 10 minutes before serving.
