Rainbow Cake

This Rainbow Cake is moist and flavored in layers of colors with buttercream vanilla frosting and sprinkles.

Ingredients:

Cake:

• 2 cups Self-Rising Flour

• 1 cup Granulated Sugar

• 2 tsp. Vanilla Extract

• Food Coloring

• 4 tbsp. Unsalted Butter, softened 

• 1 cup Milk

• 2 Eggs

Buttercream Vanilla Frosting

• 4 cups Powdered Sugar

• 1 tsp. Vanilla Extract

• 1 cup Unsalted Butter

• 1/4 cup Heavy Cream

• 1/4 tsp. Salt

• Candy Sprinkles

Instructions:

Cake

  1. Preheat oven to 350 degrees and grease 6 round cake pans.
  2. In a bowl of stand up mixer add in flour, sugar, vanilla extract and butter, milk, eggs, beat well until combined.
  3. Divide the batter into 6 separate bowls and add in different food colors in each bowl. Pour the six cake batter into 6 separate cake pans. Bake for 20 minutes until light golden brown. Take cake layers out of oven and let cakes cool for 10 minutes before frosting.
  4. Make the frosting, add the ingredients (don’t add candy sprinkles) in a bowl of stand up mixer and beat until smooth and fluffy.
  5. Assemble the cake, lay one cake layer on a plate, frost it and add second layer on top, frost it and third cake layer on top, frost it and repeat cake layers until finished. Sprinkle candy sprinkles on top of the cake.
  6. Slice and Serve
