Mexican Cornbread

This Mexican Cornbread is made with cornmeal, flour, green onions, bell peppers and cream corn, cheddar cheese.

Ingredients:

• 1 cup Cornmeal

• 1 cup Self Rising Flour

• 2/4 tsp. Granulated Sugar

• 1 can Cream Corn

• 1 cup Green Onions, chopped

• 1 cup Green Bell Peppers, chopped

• 1 cup Yellow Bell Peppers, chopped

• 1 cup Jalapeno, Chopped

• 1 cup Shredded Mexican Cheese

• 1 cup Shredded Cheddar Cheese

• 4 tbsp. Melted Butter

• 1 cup Buttermilk

• 2 Eggs

• Salt and Black Pepper to taste

Instructions:

  1. Preheat oven to 350 degrees and grease a cast iron skillet with vegetable oil or bacon dripping. Place skillet in the oven to get hot while you making cornbread batter.
  2. In a large mixing bowl add in the cornmeal, flour, sugar, salt and black pepper, cream of corn and onions, bell peppers, jalapeno and both cheeses, butter, milk, eggs, mix well until combined.
  3. Take the skillet out of the oven and pour the cornbread batter into hot greased skillet and bake for 45 minutes until done.
  4. Let cornbread cool for 5 minutes before serving.
