Eggplant Parmesan

This casserole is layer with eggplant and marinara sauce top with Parmesan cheese, mozzarella cheese.

Ingredients:

• 2 lbs. Eggplants, sliced

• 2 cups Marinara Sauce

• 1/2 cup Flour

• 1/2 tsp. Garlic Powder

• 1 tsp. Parsley Flakes

• 1 tsp. Salt

2 cups Breadcrumbs

• 1/2 cup Grated Parmesan Cheese

• 2 cups Shredded Mozzarella Cheese

• 3 Eggs

Instructions:

  1. Preheat oven to 350 degrees and grease a baking dish with cooking spray.
  2. In a shallow plate add flour, salt and garlic powder, stir well.
  3. Now coated the eggplant into the flour mixture and layer eggplants in the baking dish.
  4. In a bowl add in breadcrumbs and parsley flakes, eggs, mix well and pour over the eggplants to coated well.
  5. Pour the marinara sauc over top,  sprinkle both cheeses on topand bake 35 minutes until cheese is melted and eggplant is done.
  6. Let casserole rest for 5 minutes before serving.
