
Ingredients:
• 2 lbs. Eggplants, sliced
• 2 cups Marinara Sauce
• 1/2 cup Flour
• 1/2 tsp. Garlic Powder
• 1 tsp. Parsley Flakes
• 1 tsp. Salt
2 cups Breadcrumbs
• 1/2 cup Grated Parmesan Cheese
• 2 cups Shredded Mozzarella Cheese
• 3 Eggs
Instructions:
- Preheat oven to 350 degrees and grease a baking dish with cooking spray.
- In a shallow plate add flour, salt and garlic powder, stir well.
- Now coated the eggplant into the flour mixture and layer eggplants in the baking dish.
- In a bowl add in breadcrumbs and parsley flakes, eggs, mix well and pour over the eggplants to coated well.
- Pour the marinara sauc over top, sprinkle both cheeses on topand bake 35 minutes until cheese is melted and eggplant is done.
- Let casserole rest for 5 minutes before serving.
