Beef Enchilada


Ingredients:

• 1 lb. Ground Beef

• 1 2/4 cup Enchilada Sauce Plus more for the top of tortillas

• 1/2 cup Onion, chopped

• 2 cups Shredded Cheddar Cheese Plus extra to sprinkle over top

• Flour Tortillas

Instructions:

  1. In a skillet over med high cook the beef and onions.
  2. Pour in the enchilada sauce and cheese, stir well until heat through.
  3. Lay the tortillas out on flat surface and spoon the beef mixture into each one. Roll each tortilla to a tightly wrap.
  4. Place beef tortillas in a baking pan and spoon more enchilada sauce over the top and sprinkle with extra cheese.
  5. Bake at 360 degrees for about 35 minutes until cheese is melted and sauce is bubbly hot. Let it cool for 5 minutes before serving.
