
Ingredients:
Pasta Salad:
• 1 lb. Rotini Pasta, cooked
• Fresh Broccoli Florets, cooked
• 1 pint of Red and Yellow Cherry Tomatoes
• 1 Cucumber, sliced
• 1 package Shredded Cheddar Cheese
• 1 cup Grated Parmesan Cheese
Homemade Dressing:
• 1/3 cup Vinger
• 1/2 cup Extra Virgin Oil
• 2 Tbsp. Lemon Juice from one lemon
• 1 tsp. Salt
• 1/2 tsp. Black Pepper
Instructions:
- In a pot of salty boiling water cook the pasta until al dente and drained.
- In another pot of boiling water cook the broccoli florets until wilted. Drained.
- In a bowl mix together the dressing ingredients until well mixed.
- Add in the pasta, bell peppers, cucumber and tomatoes and cheddar cheese and Parmesan cheese in dressing, stir well until combined.
- Place the bowl into a fridge for 1 hour to chill before serving.
