Pasta Salad

This pasta salad contains pasta, veggies, red onions and cheddar cheese with homemade dressing.

Ingredients:

Pasta Salad:

• 1 lb. Rotini Pasta, cooked

• Fresh Broccoli Florets, cooked

• 1 pint of Red and Yellow Cherry Tomatoes

• 1 Cucumber, sliced

• 1 package Shredded Cheddar Cheese

• 1 cup Grated Parmesan Cheese

Homemade Dressing:

• 1/3 cup Vinger

• 1/2 cup Extra Virgin Oil

• 2 Tbsp. Lemon Juice from one lemon

• 1 tsp. Salt

• 1/2 tsp. Black Pepper

Instructions:

  1. In a pot of salty boiling water cook the pasta until al dente and drained.
  2. In another pot of boiling water cook the broccoli florets until wilted. Drained.
  3. In a bowl mix together the dressing ingredients until well mixed.
  4. Add in the pasta, bell peppers, cucumber and tomatoes and cheddar cheese and Parmesan cheese in dressing, stir well until combined.
  5. Place the bowl into a fridge for 1 hour to chill before serving.
