
Ingredients:
• 2 cups Self-Rising Flour
• 1/2 cup Granulated Sugar
• 1 cup Light Brown Sugar
• 1/2 tsp. Ground Cinnamon
• 1 cup Sweetened Coconut Flakes
• 1 cup Mashed Bananas
• 1 cup Chopped Pecans
• 1 cup Pineapple, chopped
• 1 tbsp. Vanilla Extract
• 1 cup Vegetable Oil
• 2 Eggs, at room temperature
Cream Cheese Frosting
• 1 package Cream Cheese at room temperature
• 1/2 cup Unsalted Butter softened
• 1 tsp. Vanilla Extract
• 2 cups Powdered Sugar
Instructions:
Cake
- Preheat oven to 350 degrees and grease two round cake pans with cooking spray.
- In a bowl of stand up mixer add in the flour, white sugar and brown sugar, cinnamon and pineapple, bananas, pecans, coconut flakes, vanilla extract, oil, eggs, best well until combined.
- Divide the cake batter into two greased round cake pans and bake for 35 minutes until light golden brown. Let cakes cool for 10 minutes before serving.
- Make the frosting, add the ingredients into a bowl of stand up mixer and beat well until smooth and fluffy.
- Assemble the cake, add one cake layer on a cake plate frost it and then lay the second cake layer on top, frost it. Serve
