Creamy Tomato and Spinach Pasta

This recipe is so easy to make with penne pasta and creamy tomato sauce.

Ingredients:

• 1 lb. Penne Pasta

• Fresh Spinach

• 1 med can Diced Tomatoes

• 2 tbsp. Tomato Pasta

• 1/2 tsp. Dried Oregano

• 1/2 tsp. Crushed Red Pepper

• 1/2 cup Water

• 1 package Cream Cheese

• 1/2 cup Grated Parmesan Cheese

• Salt and Black Pepper to taste

• 2 tbsp. Olive Oil

Ingredients:

  1. In a pot of salty boiling water over med high heat cook the penne pasta until al dente about 7 minutes, drain off the water.
  2. In a skillet over med high heat pour in diced tomatoes with juices, oregano, basil, crushed Red pepper, salt, black pepper , stir until combined. Add in the tomato paste and water, stir well until well mixed.
  3. Now add in the cream cheese, stir well until combined and add in the Parmesan cheese, let simmer until melted
  4. Add in the spinach and stir well and add in the pasta, stir well until combined in tomato sauce. Serve warm.
