
Ingredients:
• 1 lb. Penne Pasta
• Fresh Spinach
• 1 med can Diced Tomatoes
• 2 tbsp. Tomato Pasta
• 1/2 tsp. Dried Oregano
• 1/2 tsp. Crushed Red Pepper
• 1/2 cup Water
• 1 package Cream Cheese
• 1/2 cup Grated Parmesan Cheese
• Salt and Black Pepper to taste
• 2 tbsp. Olive Oil
Ingredients:
- In a pot of salty boiling water over med high heat cook the penne pasta until al dente about 7 minutes, drain off the water.
- In a skillet over med high heat pour in diced tomatoes with juices, oregano, basil, crushed Red pepper, salt, black pepper , stir until combined. Add in the tomato paste and water, stir well until well mixed.
- Now add in the cream cheese, stir well until combined and add in the Parmesan cheese, let simmer until melted
- Add in the spinach and stir well and add in the pasta, stir well until combined in tomato sauce. Serve warm.
