
Ingredients:
• 1 large can Corn Kernels, cooked
• 1 cup Cherry Tomatoes, halved
• 1 cup Diced Cucumber
• 1/2 cup Diced Red Onions
• 1 cup Cooked Black Beans
• 1 Diced Avocado
• 2/4 cup Feta Cheese, crumble
• 2 tbsp. Fresh Parsley
• 2 tbsp. Fresh Basil
Dressing
• 1/2 cup Olive Oil
• 1 tbsp. Vinegar
• 1 tbsp. Fresh Lemon Juice from one lemon
• 1 tsp. Honey
• 1/2 tsp. Minced Garlic
• Salt and Black Pepper to taste
Instructions:
- In a bowl mix together the dressing ingredients until combined.
- In a large bowl add in the salad ingredients and pour in the dressing, stir well until combined.
- Chill in the fridge until ready to serve.
