Carrot Souffe

Carrot Souffe is filled with a lot of sliced carrots, sugar and cinnamon, onion.

Ingredients:

• 4 cups Carrots peeled and sliced

• 2 tbsp. Minced Onion

• 2 tbsp. Fresh Lemon Juice from one

• 1/2 cup Butter, softened

• 1/3 cup Sugar

• 1 tsp. Salt

• 1/4 tsp. Ground Cinnamon

• 1 cup Milk

• 2 Eggs

Instructions:

  1. In boiling water cook the carrots until tender and drained off water. Add in the lemon juice.
  2. In a bowl add in remaining ingredients and beat well until combined. Stir cooked carrots well blended.
  3. Pour the a baking dish and bake for 45 minutes and cool slightly before serving.
