
Ingredients:
Cupcakes:
• 2 cups Self-Rising Flour
• 1 cup Granulated Sugar
• 1 tsp. Vanilla Extract
• 1/2 cup Vegetable Oil
• 1 cup Buttermilk
• 1/2 cup Unsalted Butter, softened
• 2 Eggs
Frosting:
• 2 cups Granulated Sugar
• 1/2 tsp. Salt
• 1 cup Unsalted Butter, softened
• 2 cups Heavy Cream at room temperature
• 1 tbsp. Vanilla Extract
Instructions:
Cupcakes:
- Preheat oven to 350 degrees and line a muffin pan tins with cupcake liners.
- In a bowl of stand up mixer add in flour, sugar, oil, vanilla extract and buttermilk, eggs, beat well until combined.
- Pour the batter into muffin tins liners and bake for 35 minutes until light golden brown and let cupcakes cool for 10 minutes before frosting.
- Make the frosting, in a bowl of stand up mixer add butter, sugar and vanilla extract, salt, heavy cream, best well until smooth and fluffy.
- Use a piping bag to pipe frosting on each cupcake. Serve.
