Shrimp Tacos

This shrimp tacos are so easy to make with shrimp, cole slaw, Cotiga cheese in a soft taco shell.

Ingredients:

• 1 lb. Shrimp, peeled and deviened, tails removed

• 2 cups Shredded Cabbage

• 1/3 cup Cotiga Cheese

• Soft Taco Shells

Spice Mix

• 1 tsp. Chill Powder

• 1 tsp. Cumin

• 1/2 tsp. Onion Powder

• 1/2 tsp. Garlic Powder

• 1/3 cup Cayenne Pepper

• 1 tsp. Sea Salt

• 4 Soft Taco Shells

Lime Sauce

• 1/2 cup Sour Cream

• 1/2 cup Vegetable Oil

• 1/2 cup Water

• 2 cups Fresh Lime Juice from 2 Limes

• 1/2 cup Chopped Green Onions

• 1/2 cup Cilantro Leaves

• 1 tsp. Salt

Instructions:

  1. Preheat a skillet over med high heat and in a bowl add in spice mix, add in the shrimp to coat well.
  2. Cook the shrimp in the hot oil skillet until cook through about 8 minutes.
  3. In a food processor add lime sauce pulse until combined to smooth. Add in the cabbage and toss it in the sauce
  4. Layer soft taco shell on plate add in the shrimp, cheese and top with cole slaw. Serve warm.
