Instant Pot Chicken Fried Rice

Instant pot chicken fried rice is perfect for quick easy meal with chicken, rice, peas, carrots, egg.

Ingredients:

• 1 lb. Chicken Breast, diced

• 1 2/4 cup White Rice

• 1 cup Sweet Peas

• 1 cup Diced Carrots

• 2 Eggs, slightly beaten

• 2 Clove Garlic, minced

• 1 cup Chicken Broth

• 3 tbsp. Soy Sauce

• 1 tsp. Sesame Oil

• 2 tbsp. Vegetable Oil

Instructions:

  1. In a skillet over med high heat with vegetable oil cook and scrambled the eggs, place on a plate, set aside.
  2. Add more oil to same skillet add in garlic to minced about a minute, stirring occasionally. Take minced garlic place on plate set aside.
  3. In a Instant Pot pour in chicken broth, diced chicken and carrots and rice, close the lid turn on Manuel High Pressure for 3 minutes.
  4. Remove lid and add in the soy sauce, sesame oil and rice, peas, scrambled eggs, minced garlic, stir well until combined.
  5. Close lid and cook for 2 minutes and it’s ready to be serve immediately.
