Potato Pancakes

These potato pancakes are made with leftover mashed potatoes.

Ingredients:

• 2 cups Leftover Mashed Potatoes or 4 Potatoes, cooked, mashed

• 1 Diced Onion

• 2 tbsp. Flour

• 1 tsp. Salt

• Black Pepper to taste

• 1 cup Vegetable Oil for frying

1 Egg, slightly beaten

Instructions:

  1. In a bowl add in mashed potatoes, onion, flour and salt, black pepper, egg, beat well until combined.
  2. In hot oil skillet over med high heat, spoon the mixture into patties the hot oil cook and use a spatula to flatten each one.
  3. Flip each side to light brown and done.
  4. Drain off the grease on a paper lined plate and serve warm.
