
Ingredients:
• 2 cups Leftover Mashed Potatoes or 4 Potatoes, cooked, mashed
• 1 Diced Onion
• 2 tbsp. Flour
• 1 tsp. Salt
• Black Pepper to taste
• 1 cup Vegetable Oil for frying
1 Egg, slightly beaten
Instructions:
- In a bowl add in mashed potatoes, onion, flour and salt, black pepper, egg, beat well until combined.
- In hot oil skillet over med high heat, spoon the mixture into patties the hot oil cook and use a spatula to flatten each one.
- Flip each side to light brown and done.
- Drain off the grease on a paper lined plate and serve warm.
