
Ingredients:
• 1 cup Self Rising Flour
• 1 cup Granulated Sugar
• 1 tsp. Ground Cinnamon
• 1/3 tsp. Ground Nutmeg
• 2 tsp. Vanilla Extract
• 1/2 cup Vegetable Oil
• 1/2 cup Milk
• 2 Eggs
• 2 cups Fresh Apples, peeled, cored and diced
Instructions:
- Preheat oven to 350 degrees and grease a muffin pan tins with cooking spray and line each muffin tins with muffin liners.
- In a bowl of stand up mixer add flour, sugar, ground cinnamon and ground nutmeg, vanilla extract, oil, milk, eggs, best well until combined and smooth.
- Stir in diced apples and bake for 25 minutes until light golden brown. Let muffins cool for 10 minutes before serving.
