Blueberry Pancakes

Blueberry pancakes are made with fresh blueberries is light, fluffy for easy breakfast recipe.

Ingredients:

• 1 2/4 cups Self-Rising Flour

• 2 tbsp. Granulated Sugar

• 2 tbsp. Fresh Lemon Juice from one lemon

• 1 tsp. Vanilla Extract

• 1/4 tsp. Almond Extract

• 1 cup Milk

• 2 tbsp. Unsalted Butter, melted

• 1 Egg

• 1 cup Fresh Blueberries

Instructions:

  1. In a bowl of stand up mixer, add in flour, sugar, vanilla extract and almond extract, butter and milk, egg, best well until combined.
  2. Stir in the fresh blueberries until well combined.
  3. Heat a pancake griddle or hot greased skillet over med high heat, pour the batter into greased skillet cook pancakes in batches until light golden brown.
