
Ingredients:
• 6 cups Mashed Sweet Potatoes.
• 1 cup Self Rising Flour
• 1/2 cup Granulated Sugar
• 1 tsp. Baking Powder
• 1 tsp. Salt
• Vegetable Oil for frying
Instructions:
- Preheat a deep fryer or med pot with cooking oil until hot over med high heat.
- In a large mixing bowl, add in the mashed sweet potatoes and flour, baking powder, sugar and salt, stir well until combined.
- Form each mixture into a ball and place in batches into hot greased fryer or pot, cook until golden brown.
- Place on paper lined plate to drain off the grease and then serve on a serving platter.
