
Ingredients:
Cake:
• 1 box of Lemon Cake Mix
• 1 box of Lime Flavored Jell-O Mix
• 1 cup Vegetable Oil
• 2/4 cup Orange Juice
• 2 Eggs
Cream Cheese Frosting:
• 1 package Cream Cheese, softened
• 2 cups Confectioners’ Sugar
• 2 tbsp. Fresh Lime Juice from one Lime
• 1/2 cup Butter
Instructions:
Cake:
- Preheat oven to 350 degrees and grease a 2 round cake pans with cooking spray.
- In a bowl of stand mixer, add in cake mix, oil, orange juice and lime jello mix, eggs, best until smooth and combined.
- Pour the 1/2 cake batter into 2 greased cake pans and bake for 35 minutes until light golden brown. Cool for 10 minutes before frosting.
Cream Cheese Frosting:
- In a bowl of stand mixer, add in the cream cheese, butter, beat well.
- Add in the sugar and fresh lime juice, beat well until combined to thickened.
Assemble:
- Place one cake on a cake serving plate, frost it and place the second cake layer on top, frost it. If desired garnish with lime slices.
