
Ingredients:
• 3 cups Leftover Mashed Potatoes
• 3 Slices Bacon, cooked and crumbled
• 2 tbsp. Thinly Sliced Chives
• 1 tsp. Garlic Powder
• 2/4 cup Shredded Cheese
• 1 1/2 cups Panko Bread Crumbs
• 2 Eggs, slightly beaten
• Salt and Black Pepper to taste
Instructions:
- Preheat oven to 350 degrees and greased baking sheet with cooking spray.
- In a mixing bowl, add in the leftover mashed potatoes, bacon and garlic powder cheese , salt and black pepper, stir well until combined.
- In two shallow plates, add eggs in one then second plate the breadcrumbs.
- Form the potato mixture into potato balls. Place each one in the egg and then flour.P
- Place them on the greased baking sheet and bake for 35 minutes until light golden brown.
