Potato Balls

These Potato Balls are so quick and easy to make with leftover mashed potatoes.

Ingredients:

• 3 cups Leftover Mashed Potatoes

• 3 Slices Bacon, cooked and crumbled

• 2 tbsp. Thinly Sliced Chives

• 1 tsp. Garlic Powder

• 2/4 cup Shredded Cheese

• 1 1/2 cups Panko Bread Crumbs

• 2 Eggs, slightly beaten

• Salt and Black Pepper to taste

Instructions:

  1. Preheat oven to 350 degrees and greased baking sheet with cooking spray.
  2. In a mixing bowl, add in the leftover mashed potatoes, bacon and garlic powder cheese , salt and black pepper, stir well until combined.
  3. In two shallow plates, add eggs in one then second plate the breadcrumbs.
  4. Form the potato mixture into potato balls. Place each one in the egg and then flour.P
  5. Place them on the greased baking sheet and bake for 35 minutes until light golden brown.
