Vegan Burritos

These Vegan Burritos are made with vegetables and rice, lettuce, red peppers, cheese in a tortilla wrap without any meat added to this recipe.

Ingredients:

• 1 can of Cooked Whole Corn, drained

• 1 can of Cooked Black Beans, drained

• 1 cup Cooked Spanish Rice

• 1 cup Diced Red Onions

• 1 cup Diced Tomatoes

• 1 cup Shredded Lettuce

• 1 cup Shredded Cheddar Cheese

• 2 tbsp. Lemon Juice

• 1 jar Tomatillo Sauce

• 2 tsp. Taco Seasoning

• Salt to taste

• 2 tsp. Olive Oil

• 4 Flour Tortillas

Instructions:

  1. In a large bowl, add in the cooked beans, corn and red onions, tomatoes, add in rice, lettuce, lemon juice and taco seasoning, saltstir well until combined.
  2. Assembly is to spoon in the filling into tortilla and wrap tightly, serve with salsa.
