
Ingredients:
• 1 can of Cooked Whole Corn, drained
• 1 can of Cooked Black Beans, drained
• 1 cup Cooked Spanish Rice
• 1 cup Diced Red Onions
• 1 cup Diced Tomatoes
• 1 cup Shredded Lettuce
• 1 cup Shredded Cheddar Cheese
• 2 tbsp. Lemon Juice
• 1 jar Tomatillo Sauce
• 2 tsp. Taco Seasoning
• Salt to taste
• 2 tsp. Olive Oil
• 4 Flour Tortillas
Instructions:
- In a large bowl, add in the cooked beans, corn and red onions, tomatoes, add in rice, lettuce, lemon juice and taco seasoning, saltstir well until combined.
- Assembly is to spoon in the filling into tortilla and wrap tightly, serve with salsa.
