
Ingredients:
Whoopie Pies:
• 2 cups Self-Rising Flour
• 1 cup Light Brown Sugar
• 2 tbsp. Cocoa Powder
• 1/2 cup Buttermilk
• 1/2 cup Unsalted Butter, softened
• 1 Egg
• Red Food Coloring
Marshmallow Cream Filling:
• 1 cup Marshmallow Fluff
• 2 tbsp. Cream Cheese, softened
• 1/2 cup Powdered Sugar plus more for dusting
• 1 tsp. Vanilla Extract
• 1/3 cup Unsalted Butter, softened
Instructions:
Whoopie Pies:
- Preheat oven to 350 degrees and greased baking pan with cooking spray.
- In a bowl of stand up mixer, add in the flour, cocoa powder and brown sugar, mix well.
- Add in the vanilla extract and butter, egg, beat well until combined.
- Pour the batter into the baking sheet and bake for 35 minutes until light golden brown. Let it cool for 5 minutes.
- Take a round cookie cutter to cut out round circles and set aside.
Marshmallow Cream Filling:
- In a bowl, mix together all the ingredients until smooth and place in the refrigerator to chill for 30 minutes.
- Now add in the filling into bottom of one whoopie and top with whoopie and repeat this step until done
