Red Velvet Whoopie Pies

These Red Velvet Whoopie Pies are so good and very sweet treat for any occasions.

Ingredients:

Whoopie Pies:

• 2 cups Self-Rising Flour

• 1 cup Light Brown Sugar

• 2 tbsp. Cocoa Powder

• 1/2 cup Buttermilk

• 1/2 cup Unsalted Butter, softened

• 1 Egg

• Red Food Coloring

Marshmallow Cream Filling:

• 1 cup Marshmallow Fluff

• 2 tbsp. Cream Cheese, softened

• 1/2 cup Powdered Sugar plus more for dusting

• 1 tsp. Vanilla Extract

• 1/3 cup Unsalted Butter, softened

Instructions:

Whoopie Pies:

  1. Preheat oven to 350 degrees and greased baking pan with cooking spray.
  2. In a bowl of stand up mixer, add in the flour, cocoa powder and brown sugar, mix well.
  3. Add in the vanilla extract and butter, egg, beat well until combined.
  4. Pour the batter into the baking sheet and bake for 35 minutes until light golden brown. Let it cool for 5 minutes.
  5. Take a round cookie cutter to cut out round circles and set aside.

Marshmallow Cream Filling:

  1. In a bowl, mix together all the ingredients until smooth and place in the refrigerator to chill for 30 minutes.
  2. Now add in the filling into bottom of one whoopie and top with whoopie and repeat this step until done
