Raisin Walnut Coffee Loaf Cake

This Raisin Walnut Coffee Loaf Cake is moist and layer with walnuts, raisins and brown sugar, cinnamon.

Ingredients:

• 2 cups Self-Rising Flour

• 1/2 tsp. Salt

• 1 cup Granulated Sugar

• 2/4 cup Brown Sugar

• 1/2 cup Raisins

• 1 1/3 cup Walnuts, chopped

• 1/2 tsp. Ground Cinnamon

• 2 tsp. Vanilla Extract

• 1 cup Sour Cream

• 1 cup Unsalted Butter, softened

• 2 Large Eggs

Instructions:

  1. Preheat oven to 350 degrees and greased a baking loaf pan with cooking spray.
  2. In a bowl of stand mixer, add in flour, salt, white sugar and brown sugar, cinnamon, mix well.
  3. Add in butter, vanilla extract and sour cream, beat well until combined.
  4. Stir in raisins and walnuts, mix well until combined.
  5. Pour the batter into greased baking loaf pan and bake for 35 minutes until light golden brown. Let it cool for 10 minutes before serving.
