Mexican Wedding Cookies

This Mexican Wedding Cookies are so easy made with pecans and dust with powdered sugar.

Ingredients:

• 2 cups Self-Rising Flour

• 1/2 tsp. Salt

• 1/2 cup Powdered Sugar

• 2/4 cup Pecans, chopped

• 1 tsp. Vanilla Extract

• 1 cup Unsalted Butter, softened

• Powdered Sugar for dusting.

Ingredients:

  1. Preheat oven to 400 degrees and greased a cookie sheet with cooking spray.
  2. In a bowl of stand mixer add in the butter and powdered sugar beat until light and fluffy.
  3. Add in vanilla extract, flour and salt, beat well until combined.
  4. Stir in the chopped pecans and mix well.
  5. Use a cookie scoop to scoop the cookie dough onto cookie sheet.
  6. Bake for 10 minutes until light golden brown. Let cookies cool completely on wire rack.
  7. Now dust each cookie with powdered sugar.
