
Ingredients:
Cake:
• 1 box Lemon Cake Mix
• 1 box Instant Lemon Pudding Mix
• 1 tbsp. Poppy Seeds
• 2/4 cup Vegetable Oil
• 2/4 cup Water
• 2 Large Eggs, slightly beaten
Frosting:
• 1 container Cream Cheese, softened
• 2 tbsp. Unsalted Butter, softened
• 1/3 cup Powdered Sugar
• 1/2 cup Heavy Cream
• 1 tsp. Fresh Lemon Zest from one lemon
• 1 tbsp. Fresh Lemon Juice from one lemon
Instructions:
Cake:
- Preheat oven to 350 degrees and greased a cake pan with cooking spray.
- In a bowl of stand mixer, add in cake mix, lemon pudding, oil and water, eggs, beat well. Stir in the poppyseeds until combined.
- Pour the batter into greased cake pan and bake for 35 minutes and let cake cool for 10 minutes before frosting.
Frosting:
- In a bowl of stand mixer, cream cheese, butter, lemon zest and lemon juice, powdered sugar, mix well until smooth.
- Pour the glaze over the cake and garnish with grated lemon zest.
