Lemon Poppyseed Cake

This Lemon Poppyseed Cake is moist and flavored with lemon, poppyseeds.

Ingredients:

Cake:

• 1 box Lemon Cake Mix

• 1 box Instant Lemon Pudding Mix

• 1 tbsp. Poppy Seeds

• 2/4 cup Vegetable Oil

• 2/4 cup Water

• 2 Large Eggs, slightly beaten

Frosting:

• 1 container Cream Cheese, softened

• 2 tbsp. Unsalted Butter, softened

• 1/3 cup Powdered Sugar

• 1/2 cup Heavy Cream

• 1 tsp. Fresh Lemon Zest from one lemon

• 1 tbsp. Fresh Lemon Juice from one lemon

Instructions:

Cake:

  1. Preheat oven to 350 degrees and greased a cake pan with cooking spray.
  2. In a bowl of stand mixer, add in cake mix, lemon pudding, oil and water, eggs, beat well. Stir in the poppyseeds until combined.
  3. Pour the batter into greased cake pan and bake for 35 minutes and let cake cool for 10 minutes before frosting.

Frosting:

  1. In a bowl of stand mixer, cream cheese, butter, lemon zest and lemon juice, powdered sugar, mix well until smooth.
  2. Pour the glaze over the cake and garnish with grated lemon zest.
