Fish Chowder

This Fish Chowder is touch with heavy cream adds rich flavored with potatoes and carrots. Add in fish and clam juice for a delicious soup.

Ingredients:

• 1 lb. Skinless, Cod Fish, cut in 1 1/2 inch pieces.

• 2 Potatoes, peeled and cubed

• 2 Carrots, peeled and sliced

• 2 cups Chicken Broth

• 2 cups Clam Juice

• 1/4 cup Heavy Cream

• 1 tbsp. Unsalted Butter

• 1 Thyme Sprig

• Salt and Black Pepper to taste

Instructions:

  1. In a large stockpot over med high heat, add in butter until melted.
  2. Add in potatoes, carrots, chicken broth, heavy cream and clam juice and thyme, salt, black pepper, stir, bring it to a boil, cook for 8 minutes.
  3. Add in fish and cook about 2 minutes until heat through.
  4. Serve hot in bowls.
