Instant Pot Smashed Potatoes

This Smashed Potatoes are so easy to make in instant pot and have side dish for any weeknight meal.

Ingredients:

• 2 lb. Yukon Gold Potatoes, cut into 2 inches thick

• 6 Clove Garlic, minced

• 8 tbsp. Butter

• 1 tsp. Salt

• 1 cup Water

Instructions:

  1. In a instant pot of pressure cooker, pour in water and add potatoes on the rack
  2. Now seal the instant pot, turn it on the steam release valve to “Sealing” and set it on high pressure for 8 minutes.
  3. Preheat the oven to broiler and then in a saucepan over med high heat, add in the butter and cook until butter is melted.
  4. Add into butter the garlic and salt, cook for 25 seconds. Remove from heat and set aside.
  5. Take the potatoes out of instant pot and place on baking sheet, smashed them with pressing down on each potatoes.
  6. Drizzle garlic butter on each smashed potatoes and place them in oven for 5 minutes until light golden brown.
  7. Serve the smashed potatoes with your favorite toppings.
