
Ingredients:
• 2 lb. Yukon Gold Potatoes, cut into 2 inches thick
• 6 Clove Garlic, minced
• 8 tbsp. Butter
• 1 tsp. Salt
• 1 cup Water
Instructions:
- In a instant pot of pressure cooker, pour in water and add potatoes on the rack
- Now seal the instant pot, turn it on the steam release valve to “Sealing” and set it on high pressure for 8 minutes.
- Preheat the oven to broiler and then in a saucepan over med high heat, add in the butter and cook until butter is melted.
- Add into butter the garlic and salt, cook for 25 seconds. Remove from heat and set aside.
- Take the potatoes out of instant pot and place on baking sheet, smashed them with pressing down on each potatoes.
- Drizzle garlic butter on each smashed potatoes and place them in oven for 5 minutes until light golden brown.
- Serve the smashed potatoes with your favorite toppings.
