Potatoes And Green Beans Salad

This Potato and Green Beans Salad is made with fresh green beans with tomatoes, red onions , fresh mozzarella cheese, drizzle with Italian dressing.

Ingredients:

• 1 pint Fresh Green Beans

• 2 lbs. Small Yukon Potatoes

• 1 Tomato, sliced

• 1 Red Onion, thinly sliced

• Fresh Mozzarella Cheese

• 3 tsp. Lemon Juice

• Drizzle Italian Dressing

• Salt and Black Pepper to taste

Instructions:

  1. In a pot of salty boiling water, cook the green beans until tender about 3 minutes. Transfer to a bowl of ice water. Drain and pat dry.
  2. In the same pot with salty boiling water, cook the potatoes until tender about 10 minutes. Drain off excess water and cut the potato in halves.
  3. Add the green beans and potatoes, tomato, onion, mozzarella cheese on serving plate and drizzle lemon juice and Italian dressing over top. Season with salt and black pepper.
