
Ingredients:
• 1 pint Fresh Green Beans
• 2 lbs. Small Yukon Potatoes
• 1 Tomato, sliced
• 1 Red Onion, thinly sliced
• Fresh Mozzarella Cheese
• 3 tsp. Lemon Juice
• Drizzle Italian Dressing
• Salt and Black Pepper to taste
Instructions:
- In a pot of salty boiling water, cook the green beans until tender about 3 minutes. Transfer to a bowl of ice water. Drain and pat dry.
- In the same pot with salty boiling water, cook the potatoes until tender about 10 minutes. Drain off excess water and cut the potato in halves.
- Add the green beans and potatoes, tomato, onion, mozzarella cheese on serving plate and drizzle lemon juice and Italian dressing over top. Season with salt and black pepper.
