Crockpot Cauliflower Soup

This Cauliflower Soup is creamy and cheesy is low-carb recipe that’s made right in crockpot.

Ingredients:

• 1 head Cauliflower, finely chopped

• 2 Stalks Celery, finely diced

• 2 Clove Garlic, minced

• 3 cups Chicken Broth

• 2 cups Heavy Cream

• 2 cups Shredded Cheddar Cheese

• Salt and Black Pepper to taste

Instructions:

  1. In a crockpot, add in cauliflower and garlic, chicken broth, cover with lid and let it cook for 8 hours on low.
  2. In an immersion blender puree the mixture until smooth.
  3. Add in heavy cream and cheese, stir until cheese is melted. Season with salt and black pepper and serve hot.
