
Ingredients:
Crust:
• 16 Crushed Graham Crackers
• 1/3 cup Melted Unsalted Butter
• 1/3 cup Granulated Sugar
Cheesecake Filling:
• 1 package Cream Cheese, softened
• 1/2 cup Granulated Sugar
• 1/2 tsp. Vanilla Extract
• 2 Eggs
Berry Sauce:
• 2 cups Frozen Strawberries, thawed
• 1/2 cup Granulated Sugar
• 1/2 cup Water
• 1 tbsp. Cornstarch
• 1 tbsp. Fresh Lemon Juice from one lemon
Instructions:
1. Preheat oven to 350 degrees and lined a muffin pan with cupcake liners in muffin tins.
2. In a bowl add in graham cracker crumbs, melted butter and sugar, mix well and press in muffin tin liners.
3. Make the cheesecake filling, cream cheese, sugar, vanilla extract and eggs, beat well until combined and pour the filling into graham cracker crumbs crust.
4. Bake for 25 minutes and let cheesecake cool for 10 minutes.
5. Make the berries sauce, add in cornstarch, sugar, lemon juice and strawberries stir until sugar is dissolved and syrupy.
6. Pour the sauce on top the cheesecake and garnish with strawberries and blueberries.
